Fajita Steak Salad Bowl

This is a pretty simple way to get in loads of healthy food and still enjoy something really tasty. Obviously, I'm not having any wraps or taco shells with this, because I'm cutting down on the carbs but you could if you fancied!



For the veggies I used: little gem lettuce and a bit of shredded iceberg (just  to bulk it out a bit), cucumber fingers, sliced raw pepper, cherry tomatoes and avocado. Just arrange them in a bowl, like I have or be a bit messy and mix everything together.

The steak I used was frying steak - I trimmed off any bits of fat and sliced it into strips before throwing in to a hot pan along with half a sliced red onion, dried parsley, garlic, 2 teaspoons of paprika. Let this fry a little & give everything a good mix together so the steak is coated with the seasoning.

After a few minutes, I add a couple of sliced chestnut mushrooms, 2 teaspoons of Chipotle Burger seasoning from Uncharted Spice, a generous dose of salt and pepper and a squirt of lime juice.
Give everything another good stir then step away from the hob to grate a bit of cheese if you fancy it and slice up a couple of spring onions; the steak cooks quickly so once you've done this, you'll be ready to serve.

Add your steak to the salad/vegetables then dollop some fat free Greek yogurt on top and sprinkle with the grated cheese and spring onions. It tastes great and is a super quick, healthy meal!
