Pork and Apricot burger

Usually, I make beef or turkey burgers...I throw in some chorizo, fill them with cheese for a melty middle; they taste great but they aren't super healthy.
Today, I tried pork burgers with added dried apricot. If you don't like dried apricot or even dried fruit, don't let this put you off, you don't really notice they are in there....they just add flavour!


For the pork burgers I used:
500g 5% fat pork mince
4 dried apricots, diced finely
1 tsp fresh thyme
20g of pine nuts, roasted and crushed (I used a rolling pin)
Salt and pepper

Get everything into a bowl and give it a good mix. Make sure looks the ingredients are fully dispersed so you get a bit of everything in each burger.

Split the mixture into 4 - weigh it out if you want or just guess!
Roll the mixture in to balls and then flatten to create a burger shape.

Grill them on a medium / high heat, giving them a turn part way through. I cooked mine for about 15 minutes but it depends on how much you flatten them, so make sure they're cooked through.

I served mine with salad leaves, sweet potato fries, sprinkled with paprika and some chipotle burger sauce.

Burger sauce
4 teaspoons of fat free Greek yogurt
1 teaspoon of Chipotle paste
