Parmesan crusted salmon

Tonight's fishy feast took 5 minutes to prepare - literally!! It's really healthy, high in protein, low in carbs & full of flavour.



I bought a big slab of boneless salmon fillet and sliced it into portions but you could buy individual fillets if you prefer.
I started by lining a baking tray with grease-proof paper and setting the oven to 175*c. Get your salmon on the tray and season with salt and pepper, a squeeze of lemon juice and drizzle with some olive oil.....you don't need loads of oil. Leave it off if you're counting syns/points/calories, you wouldn't miss it.
In a bowl, finely grate some fresh Parmesan cheese - again, if you're counting syns/points etc, weigh out the allowance so you know how much you're having. If you aren't counting- fill your boots!!
To the cheese, add 2 finely diced or crushed garlic cloves and a really good handful of fresh, chopped parsley. Mix this together and top your salmon fillets with it.
That's it!!! All that's left is to cook it.
Stick it in the pre-heated oven for about 15 - 20 minutes.
I served mine with steamed tenderstem broccoli, asparagus and some mangetout which was left over from yesterday's meal.
