Chicken Bites
Chicken bites were a regular feature of my 'Fakeaway' nights while I was sticking to Slimming World. They are really quick & easy to make but when they're served with homemade chips and fat free coleslaw, you feel like you've had a bit of a treat!
I use 1 chicken breast per person & 1 wholemeal roll for the meal. Syn the bread if you want, otherwise use it as half of your Healthy Extra B, by doing this you'll have a syn free meal.
Firstly, I grate the wholemeal roll - I find it easier to freeze it first, it holds together a little better and saves having big lumps of bread or any waste. Now you need to season the breadcrumbs...this is really personal preference. I tend to use paprika, salt, pepper, garlic granules, mixed herbs, or spice blends from Uncharted Spice . If you want a bit of heat, add some chilli powder or flakes to the breadcrumbs. Whatever you choose to use, just make sure you give it a good mix before adding the chicken, so the flavour is even and nobody get a super hot one!
Dice the chicken in to chunks and dip into a beaten egg. Make sure you get it all coated so your breadcrumbs get everywhere and stay put.
Once you're happy, put the chicken on a lined baking tray (spray with a bit of Fry Light if you want but they shouldn't stick because you'll turn them while cooking) & in to the oven. I preheat mine to about 175*c and cook them for around 15 minutes. Give them a turn half way through so they cook evenly and the breadcrumbs crisp up a bit.
For a syn free meal, they really are pretty good. As I said earlier, have them with homemade chips, salad, homemade (or shop bough) coleslaw or just cook them for nibbles and have them with dips.....sweet chilli or garlic mayo works well!
