Chicken, chorizo and red pepper pizza
There's nothing better than pizza.... even better when it's a pizza which doesn't cost an arm & a leg!
I make my pizza base with strong white bread flour, yeast, warm water, salt and pepper. A pretty basic dough recipe but it works perfectly. Once the dough is made up I put it in the oven, on low, to let it prove. The dough is much easier to work and stretch into shape.
The tomato sauce is a bit of a mish mash of everything. Passata, tomato puree, garlic, balsamic vinegar, brown sugar, and Pizza Herbs from www.unchartedspice.co.uk
I cook everything in a pan, letting it simmer so it reduces and thickens a little. Any left overs can be frozen and used the next time you have a pizza craving!
As the post title suggests, I used chicken (cooked), chorizo (sliced) and red peppers (diced) as my topping. Really simple, full of flavour and used up a few bits from the fridge.
I topped this with chunks of mozzarella cheese and threw it in the oven (about 190 fan) for a good 20 minutes before checking the base was crispy and cooked through!
