Jollof Rice

I sometimes find following diet/slimming plans boring & when I get bored, I cheat!
Jollof rice is a perfect dish to make meals a little more interesting.  It's really fresh, a little spicy & can be eaten alone, as part of a salad or with chicken, fish & even BBQ.


  I cooked Thai black rice (I found this at Sainsbury's. It's a little more expensive than the usual rice but it's really nice, it's got a nutty flavour and the grains are a little firmer), it takes about 30 minutes to cook so prepping everything else can be done within this time.
While it was cooking I finely diced a red onion, a red pepper, a red chilli, a thumb sized piece of ginger (peeled) and 2 ripe tomatoes.

Once the rice is cooked, I drained the water (it's purple - beetroot purple!!) and mixed in a cooked packet of white basmati rice then added all of the diced veggies.
Give it a really good mix and season with some salt and pepper.
I threw in some roughly chopped coriander and a good squirt of lime juice.

Put it in the fridge and eat it with anything you like.... or just grab a spoonful when you're starving!
