Chorizo and Paprika Pork
The thought of making this tonight filled me with dread. I couldn't be bothered to stand over the hob cooking....luckily it was really easy and super quick - I even had time for a cocktail! WINNER!!
To make this deliciousness, you will need:
500g Pork fillet, excess fat removed and diced in to chunks
2 red onions, peeled and cut into wedges
1 red pepper, de-seeded and sliced
1 finger length of chorizo, sliced and halved
2 tbsp of paprika
1 clove of garlic, peeled and crushed
2 tsp parsley
1 chicken stock cube, dissolved in 300 ml of hot water
4 heaped dessert spoons of fromage frais
To a deepish frying pan add the onion wedges, garlic and peppers. Allow these to cook a little to soften, you can put a spoonful of oil in, or a bit of Fry Light if you want.
To this add the chunks of pork and give everything a stir, let the pork brown and get a bit of colour.
Throw in the chorizo and paprika. Thoroughly mix so everything is coated.
Stir in the stock and parsley and leave to cook.
I turned my hob down and covered the pan with a lid and let this cook for about 10 minutes.
I used this time to sit down, scroll through Facebook and drink a Woo Woo.
When I had finished my cocktail, I went back to the pan and gave the food a good stir, left the lid off and turned the heat up again. I stirred in the framage frais, a bit at at time and left to cook for a couple of minutes.
I stirred cooked rice in to the pan which absorbed some of the liquid (if you have other plans and don't want to use rice, you can leave the dish to cook for longer so it reduces), seasoned with salt and pepper and troughed it!!
