Pulled Pork

I joined fat club again yesterday for the millionth time - as it was only yesterday, I'm still craving massive, carb filled meals so this is a perfect tea for me!
 It tastes good, there's plenty on my plate and there are leftovers in the fridge that I can munch on when I'm ready for quitting because I can't face another egg based snack.



This recipe is pretty hefty on the ingredients so you might need to stock your spice cupboard!

For pulled pork, you will need:

1 crumbled pork stock cube. This isn't essential but adds a bit of flavour.
Pork shoulder, trim off any visible fat. This is a pain but it's worth it!
1 tbsp paprika
1 tsp chilli powder
2 heaped tbsp tomato purée
1 tbsp Worcestershire sauce
1.5 tbsp balsamic vinegar
1 heaped tbsp sweetener 
1 tsp garlic granules
500g passata
2 tsp dried chilli flakes
200ml Diet Coke
2 tsp mixed herbs
2 tsp jerk seasoning, I have a jar of homemade jerk but you can buy it- Just watch the sugar content.
Salt and pepper

Get yourself a decent sized oven dish and throw in everything except the pork.
Give everything a good stir together - be careful when adding the sweetener and coke, it fizzes up a bit and you can end up with a bit of  overflow!
You can put the pork in to the dish as one whole piece or cut it down in to a couple of smaller chunks - it's up to you!
Once the pork is in the dish, spend a bit of time coating the outside with the sauce, pour it over the top, turn the meat over a few times, stab the pork a bit to get the sauce inside - give it a good going over!
I covered my dish with tin foil and put it in to the oven on about 170*c.
Cook it for a couple of hours before removing it to give the pork a turn and re-coat with sauce. Cover with foil and put back in the oven for another couple of hours.
The longer you leave it, the better it'll be. I took mine out after about 5 hours and the pork just fell apart. I always pull the pork and stir it with the sauce a little while before serving so that all the flavours get right in to the meat.

I usually have this with a bit jacket potato, loads of salad and homemade coleslaw...today I made some sweet potato chips and corn on the cob.
