Moroccan Quinoa Salad
I've been doing a bit of research recently, trying to find foods which are suitable and unsuitable for managing the symptoms of PCOS. As usual, eating natural, unprocessed, fresh foods is the way forward!
I'm really bad for not eating well during the day, generally snacking on rubbish I get from the petrol station and only eating a decent meal in the evening; this isn't great for blood sugar levels and how insulin works in the body. So, I'm trying to be better and I've meal prepped my arse off today so that I have things to eat while I'm working!
I've made this quinoa salad with some Moroccan style seasoning. It tastes pretty good!
To make this, I've used:
2.5 cups of cooked quinoa
1 pomegranate, deseeded
1/2 a red onion, finely diced
2 cups cooked puy lentils
2 garlic cloves, crushed
1 carrot, peeled and finely grated
1/2 tsp ground ginger
1 tsp paprika
1 tsp ground cinnamon
1 tsp cumin seeds
1 tsp turmeric
Small handful of fresh coriander, roughly chopped
3 dried apricots, very finely diced (optional)
Salt and pepper
Add all ingredients to a large mixing bowl.
Stir everything together, check the seasoning and serve.
Simple as that!
